I first learned to cook when I came to the US from France and missed my mom's cooking. I was working as a journalist for French TV in New York City, and would call her every weekend to learn a favorite recipe.
In my late 20's, I was also a partner in the first certified organic poultry and game bird farm in the US. We provided pheasant, duck, geese, guinea hens and fancy chickens to Anthony Bourdain, Dean & Deluca and many other fine dining establishments in the city.
I eventually left the news business and moved with my family to Connecticut where I won three Emmy Awards working with Martha Stewart, and then won a James Beard Award working with Lidia Bastianich.
My wife Amy and I now have our own YouTube Channel, CulturedandCured.
We've recently moved to Saint Augustine, Florida.

In my cooking classes I share the tricks and skills that I've picked up from my mom and from working with chefs and celebrities of the food TV world. The classes I create are equal parts education and entertainment. You'll enjoy the preparation, and the satisfaction of eating a gourmet meal you made with your own hands. We keep class size small, and I am always willing to work with participants to customize a class that meets their dietary needs. Classes take place at our private kitchen in downtown St. Augustine, or I can come to your home or vacation rental.

Sometimes, especially if you're staying with family or a group of friends at a short-term rental, you'll want to dine in. I'll come over and prepare a menu custom-designed for your special needs and tastes. I promise it will be one of the highlights of your vacation - or staycation!

I like to experiment with gourmet techniques like sous vide cooking, which is time consuming, and not a method that you'd want to use at home everyday. Like sous vide, it cooks food gently, at low temperatures, enhancing the nutritional profile, intensifying the flavors and brightening the colors - a culinary trifecta!

Amazing Experience! Far exceeded our expectations. We were greeted at the door and instantly made a connection after the first introduction. Amy and Alex created a warm and welcoming, and very clean environment. The experience was not just about cooking but about sharing our experiences with one another. While we told stories, Alex gave us step-by-step explanations and we learned by joining Alex and Amy in preparing the meal. There’s something magical about preparing a meal together with strangers, and within a few minutes we were sharing our own personal journeys. The food was super-fresh and healthy. Messaging in preparation for the dinner was prompt and informational, helping us decide on our menu. We chose the salad Nicoise. The ingredients were intentionally and conscientiously chosen for freshness. Even though we are from Louisiana and know how to cook, we learned a lot of new tips. Dinner was served on their quaint dining table where we continued sharing stories and making connections. Even the bottle of wine Alex served us had a unique story. I can’t wait to visit Florida again so we can partake in another experience with Alex and Amy, and the neighbor who we also made a great connection with and laughed with. I highly highly recommend this experience.
